Michael Angelo‘s baked Eggplant Rolletini contains two rolletinis. Each has eggplant with breading and a filling of sauteed spinach mixed with ricotta, mozzarella and Pecorino Romano cheeses. Of course, the rolletinis sit in a tomato sauce made with Italian olive oil.

I’m not a fan of ricotta cheese and rarely find a dish I like a lot. The filling was OK — ricotta and spinach ruled the taste. I’ve had better tomato sauce from a frozen meal. The eggplant and breading was average. I just didn’t find think the flavors worked well together.

My favorite eggplant dish from Michael Angelino’s, of course, has more calories and fat than I would like. I looked it up on the web site, but couldn’t find it. It was Eggplant Parmigiana. It’s not the Parmesan as the numbers aren’t as high as I remember.
