Kashi Mayan Harvest BakeI keep a running list called “store items.” This list contains products I’ve read about that I want to try. Some are hard to find even in the whole food and foodie type stores. Anyway, somewhere I read an article listing the best products of the healthier frozen food category. Of course, it caught my eye. Kashi Mayan Harvest Bake appeared on the list, so onto my “store items” list it went.

It had been on the list for a long time because the carbs were too high for me when I was on the low carb diet. It has 58g carbs and 19g sugars. The excellent 8g of fiber wasn’t enough to offset it. The dish includes plantains, black beans, sweet potato, Kashi 7 Whole Grain pilaf, amaranth and polenta. Not bad carbs, but still too many for me at the time.

All of these ingredients sit in a bed of spicy ancho sauce. What an original dish, filling and vegan! We Americans have gotten out of control with out portions. Even though I’ve kept my portions under control for months, frozen meals rarely fill me. But they do let you exercise portion control. I struggle in the afternoons and evenings. After eating this and a healthy treat, I didn’t want to finish my treat simply because I was full.

The only reason I didn’t give this meal more than four stars was the plantain. The meal comes with two pieces. One was thin and the other thick. The thick one had a harder consistency like it didn’t cook long enough. It was by no means raw or undercooked. The thinner one was on target. I hope that when I eat this again, both pieces will be thin.

I’m not a fan of polenta, yet I hardly recognized it in this dish. All the ingredients transformed the Mayan Harvest Bake into something I’ve never had yet they tasted like they were meant to be together. Oh, and only 380mg sodium! And it didn’t taste bland… far from it! Impressive.

I wonder what other Kashi meals, if any, taste good AND fill you up without the sodium? I guess I’ll have to try and find out.
