Amy's Tofu ScrambleThis Mexican dish surprised me in that I liked it better Amy’s Tofu Scramble with Hash Browns and Veggies. This is organic tofu scrambled with vegetables that’s topped with salsa and grated cheddar cheese. The mixture sits on a crunchy and tasty mini organic tortilla. And refried black beans stay on the side for a perfect side dish.

If I could change one thing — it would be swap the potatoes between the two dishes. I’d want the hash browns from the Hash Brown dish to replace the cut potatoes in this one. Also, Amy’s Kitchen could skip the salsa or put it on the side. The tofu egg scramble did not need salsa. It was delicious without it.

And I cooked it in the toaster oven. I don’t think microwaving could do it justice. It would mean missing out on a crispy tortilla and possibly flat potatoes.
